Lasagna Alla Vodka

Wonton wrappers are the secret to this delicate lasagna preparation.

Ingredients

1 tablespoon olive oil

1 tablespoon butter

1/2 medium onion, minced

1 clove garlic, minced

1/3 cup vodka

5 ounces tomato puree

1/2 cup heavy cream

1/4 teaspoon salt

Freshly ground black pepper

18 wonton wrappers

Nonstick cooking spray

8 ounces burrata with truffles

6 large fresh basil leaves

6 tablespoons shredded mozzarella

6 tablespoons grated Parmesan

Instructions

  1. Preheat oven to 350F.

  2. To make the vodka sauce, add olive oil and butter to a large skillet over medium heat. When butter is melted, add onion and garlic and sauté for two minutes.

  3. Add vodka, stir, and cook for 3 minutes. Reduce heat to low and add tomato puree and cream. Stir and simmer for 3 minutes. Season with salt and pepper and set aside.

  4. Press a 3-inch biscuit or cookie cutter into each wonton wrapper to create 18 wonton rounds.

  5. Apply a thin layer of cooking spray to a 6-cup silicone muffin pan.

  6. Pour a tablespoon of vodka sauce in the well of each muffin cup, followed by one wonton round. Top each wonton round with 1-2 teaspoons of burrata and 1 basil leaf.

  7. Top with another wonton round, more sauce, and the remaining burrata. Top each muffin cup with remaining wonton rounds, a teaspoon more sauce, a tablespoon of mozzarella, and a tablespoon of Parmesan.

  8. Bake for 20 minutes; then allow to cool in the pan for 10-15 minutes, until each Lasagna Alla Vodka easily removes from the pan.
