Banana Chocolate Chip Cookies
Mandate: Old bananas will no longer be used for banana bread. That is all.
Ingredients
2 tablespoons butter, room temperature
1/4 cup coconut sugar (or substitute brown sugar)
1 egg beaten
1/4 teaspoon vanilla extract
1 cup diced ripe banana
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
3 ounces semi-sweet chocolate chips
Instructions
Preheat over to 375F. With an electric mixer, combine butter, sugar, egg, vanilla, and banana until smooth.
In a separate bowl, combine flour, baking powder, and baking soda.
Add flour mixture to wet mixture and blend on low speed until combined.
Add chocolate chips and use a spoon to gently fold them into the dough.
Drop 8 scoops of dough onto a parchment lined baking sheet and bake for 10 minutes.
