Chicken Lasagna Bites

 

A festive, satisfying app that's ideal for parties - no casserole dish required!

Ingredients

Nonstick cooking spray

1 fresh lasagna pasta sheet

1/2 cup diced grilled chicken

1/2 cup whole milk ricotta

1/2 cup shredded mozzarella

1/2 cup grated Parmesan

1/4 teaspoon salt

1/4 teaspoon pepper

Fresh basil, for garnish

Instructions

  1. Preheat oven to 375F.

  2. Spray 8 wells of a minimuffin pan with nonstick spray

  3. Cut the sheet of lasagna pasta into 8 strips, 3/4" wide x 5" long.

  4. Combine ricotta, mozarella, Parmesan, salt and pepper.

  5. Place a strip of pasta around the inside of each well, which will form the outside of each chicken lasagna bite.

  6. Add a few cubes of chicken to the bottom of each well, followed by 1-2 teaspoons of the ricotta mixture.

  7. Sprinkle a little Parmesan over the top of each chicken lasagna bite and bake for 20-25 minutes until slightly golden and bubbly.

  8. Cool the chicken lasagna bites in the pan, undisturbed, for 15 minutes. Gently unmold each chicken lasagna bite and transfer to a plate. Garnish with basil.
