Denver Sheet Breakfast

 

If you’re lazy and you know it, clap your hands! If you’re lazy and you know it, here’s a pan! If you’re lazy and you know it then your plate will never show it so bake your Denver omelette on a pan.

Ingredients

4 ounces shredded cheddar cheese

4 eggs

3 ounces ham, chopped

1/3 cup diced bell peppers

A few thin slices of red onion

1/2 teaspoon salt

Sliced green onions, for garnish

Instructions

  1. Preheat oven to 375F. Line a quarter sheet pan with parchment paper. Spread the cheese in an even layer across the parchment. Clear the cheese away from 4 little circles around 2 inches in diameter. Crack an egg into each circle. 

  2. Sprinkle the ham, peppers and onions over the cheese and egg whites. Season each yolk with salt and bake for 10-12 minutes until the cheese is melted and the eggs are cooked to your liking. 

  3. Cool in the pan for 5 minutes. Carefully slip the parchment off the baking sheet onto a cutting board and cut into 4 squares. Each serving is 2 squares.

  4. Garnish with green onions.
