PPS Instant Pot Sweet Potatoes

What to do with your extra Pumpkin Pie Spice? It's fairy dust, just waiting to collab with your sweet potatoes!

Ingredients

10 ounces sweet potatoes, peeled and cut into 1-inch pieces

1 cup water

1 teaspoon salt

1 tablespoon unsalted butter

1/2 teaspoon pumpkin pie spice

1 teaspoon maple syrup

Instructions

  1. Insert the metal trivet into the inner cooking pot of an Instant Pot. Place the sweet potatoes onto the trivet. (Some sweet potatoes will fall through to the bottom and that is OK.) Add water and 1/2 teaspoon of salt.

  2. Set release valve on the lid to the "Sealing" position. Secure lid (turn and lock).

  3. Select the “Pressure Cook” or "Manual" setting (high pressure) and set timer for 12 minutes. Steam releasing during pressure build-up is normal.

  4. When the Instant Pot beeps after 12 minutes of cooking, carefully “quick release” the pressure by turning the steam release handle on the lid to the "Venting" position (using a towel helps to protect your hand).

  5. Remove the lid and using hot pads, carefully remove the inner cooking pot, drain the sweet potatoes, and transfer the sweet potatoes to a large bowl.

  6. Add butter, pumpkin pie spice, remaining salt, and maple syrup to the sweet potatoes and mash until smooth.
