Nacho Italiano
This is what happens when sausage pizza meets its nacho soul mate.
Ingredients
1 tablespoon olive oil
4 links hot Italian sausage, casings removed
1/2 cup green bell pepper, diced
1/2 cup onion, diced
1/2 cup roasted red pepper strips
1 12-ounce can evaporated milk
4 ounces shredded mozzarella cheese
1 tablespoon cornstarch
6 slices white American cheese slices (4 ounces)
1/2 teaspoon salt
Nonstick cooking spray
10 ounces thick corn tortilla chips
1/4 teaspoon red pepper flakes
2 tablespoons grated Parmesan cheese
Instructions
Place the sausage in a pan and cook over medium until brown and cooked through. Break sausage apart into small crumbles. Wipe the pan clean, add olive oil, bell pepper and olive and sauté for 3 minutes. Set aside.
In a medium pot over low heat, add the evaporated milk.
Combine mozzarella and cornstarch in a bowl until cheese is completely coated. Add mixture and American cheese to the pot and heat, stirring constantly, until the cheese is completely melted, about 3-4 minutes. Season with salt.
Spray a sheet pan with a light layer of nonstick cooking spray and add the chips in a single layer.
Sprinkle sausage, bell peppers, onions, and roasted peppers over the chips, then top with mozzarella cheese sauce.
Place the sheet pan under the broiler for 1-2 minutes, keeping a watchful eye so the chips are warm but not burned.
Remove sheet pan from broiler and garnish nachos with red chili flakes and Parmesan.
