Banh Mi Bites
All of the flavors of the savory banh mi sandwich transformed into a 1-2 bite snack that is safer to serve outside in warmer months.
Ingredients
1 teaspoon rice wine vinegar
1/4 teaspoon sugar
1/4 teaspoon salt
1/4 cup shredded carrot
8 endive spears
2 tablespoons hoisin
2 radishes, thinly sliced
2 ounces roasted pork tenderloin, cut into thin strips
1 red Fresno chili pepper, thinly sliced
2 tablespoons fresh cilantro leaves
1/2 English cucumber, sliced into long, thin, ribbons
Instructions
Combine vinegar, sugar, and salt in a small bowl and add carrots. Set aside.
Place the endive spears on a serving plate.
Add 1/2 teaspoon of hoisin on each spear, followed by a slice of radish, a strip or two of pork, some pickled carrot, a slice or two of Fresno chili, and a cilantro leaf.
Garnish the plate with the ribbons of cucumber and any remaining radish, chilis and cilantro.
