Pumpkin Pie-Spiced Granola

 

Shhh... no one knows it's this easy to make your own granola. Let's not even talk about the fact that it's the PERFECT recipe to use up your pumpkin pie spice. Win-Win!

Ingredients

1 1/2 cup oats

2 1/2 teaspoons pumpkin pie spice

1/2 teaspoon salt

1/2 cup sweetened shredded coconut

1/3 cup sliced almonds

2 tablespoons vegetable oil

1/3 cup maple syrup

1/2 teaspoon vanilla

2 tablespoons creamy peanut butter

Instructions

  1. Preheat oven to 325F.

  2. In a medium bowl, combine the oats, 1 1/2 teaspoons of pumpkin pie spice, salt, coconut, and almonds. Add the oil, maple syrup, and vanilla and mix well to combine. Add the peanut butter and gently work it in to the mixture using the back of a wooden spoon (clumps are fine).

  3. Evenly spread the mixture on a parchment lined baking sheet and bake for 12 minutes. Toss the granola and bake an additional 12 minutes, or until golden brown and crisp.

  4. Cool completely before serving.

  3. Evenly spread the mixture on a parchment lined baking sheet and bake for 12 minutes. Toss the granola and bake an additional 12 minutes, or until golden brown and crisp.
  4. Cool completely before serving.
