Rigatoni Amore
Fresh spinach, smoked mozzarella, and sun dried tomatoes baked in a mascarpone cream sauce.
Ingredients
8 ounces mezzi rigatoni
6 ounces mascarpone cheese
1/3 cup half and half
1 tablespoon sun dried tomato paste
3 ounces fresh, baby spinach
2 ounces sun dried tomatoes, chopped
4 ounces smoked mozzarella, cubed
1/2 teaspoon pepper
Nonstick spray
1/4 cup shredded Parmesan
Instructions
Preheat oven to 350F. Boil mezzi rigatoni in heavily salted water for 7 minutes; drain pasta.
In a small pot over medium low, combine mascarpone, half and half, and sun dried tomato paste. Still frequently until mascarpone is fully melted.
Combine drained pasta with mascarpone sauce, sundried tomatoes, and spinach.
Spray a light layer of cooking spray in a loaf pan and fill it with half the pasta. Spread the smoked mozzarella in an even layer over the pasta, then top with remaining pasta.
Sprinkle the top with pepper and Parmesan, cover with aluminum foil, and bake for 20 minutes. Remove aluminum foil and bake another 10 minutes.
