Street Corn and Chicken Salad
Your favorite Mexican street food gets a protein punch - and a flavor boost!
Ingredients
1 cup frozen corn, thawed
3 tablespoons thinly sliced green onion
2 tablespoons chopped cilantro
1 tablespoon minced jalapeño
1/4 cup crumbled Cotija cheese
8 ounces shredded rotisserie chicken
3 tablespoons mayonnaise
1 tablespoon lime juice
1 teaspoon lime zest
1 teaspoon garlic paste
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon Tajin, for garnish
Instructions
Combine all ingredients, except Tajin.
Mix well and refrigerate for 30 minutes.
To serve, garnish with a sprink of Tajin.
