Tex-Mex Strata

 

The flavors of the southwest in one flavor-packed meal, featuring our stellar beef chorizo recipe.

Ingredients

1 teaspoon olive oil

1 cup medium onion, thinly sliced

1 cup bell pepper, thinly sliced

2 teaspoons taco seasoning

Nonstick cooking spray

3 ounces cubed, stale bread

3 large eggs, beaten

3/4 cup whole milk

3 ounces shredded Mexican cheese blend

3 ounces cooked beef chorizo

Cilantro leaves, for garnish

Mexican crema, for garnish

Instructions

  1. Add olive oil to a pan over high heat. Once it begins to smoke, add onion, bell pepper, and 1 teaspoon of taco seasoning. Cook until soft and slightly blackened, about 5-6 minutes; set aside.

  2. Apply a thin layer of nonstick cooking spray to a loaf pan. Transfer bread to the pan, ensuring it's distributed in an even layer.

  3. Combine eggs, milk, remaining taco seasoning, cheese, chorizo, and cooked onions and peppers.

  4. Pour the egg mixture over the top of the bread. Gently toss to combine. Cover and chill for one hour or up to overnight.

  5. Preheat oven to 350F and bake, uncovered, for 50-55 minutes, until the top is golden-brown and eggs are set. Cool for 5 minutes before serving. Garnish with cilantro leaves and crema.
