Waldorf Chicken Salad

 

Bright, creamy, and delicious - this low-carb chicken salad says bye-bye, bread and nice knowin' ya!

Ingredients

1 teaspoon sugar

1 teaspoon lemon juice

3 tablespoons mayonnaise

2/3 cup diced apple

1/3 cup diced celery

1/2 cup halved grapes

1/4 cup chopped walnuts

6 ounces cooked chicken breast, cubed

Butter lettuce or romaine spears, for serving

Instructions

  1. In a large bowl, combine the sugar, lemon juice, mayonnaise and salt.

    Add apple, celery, grapes, walnuts, and chicken and toss to combine. Serve on butter lettuce or romaine spears.
