Tuna Melt Omelette

A protein-packed meal for any time of day.

Ingredients

12 ounces of albacore tuna packed in water, about 9 ounces drained

3 tablespoons mayonnaise

3 tablespoons diced onion

1 teaspoon salt

6 eggs

1/2 teaspoon cracked black pepper

1 tablespoon butter

4 slices sliced Monterey Jack cheese

Instructions

  1. For best results, allow all ingredients to come to room temperature before omelette preparation.

  2. Combine drained tuna with mayonnaise, onion and salt.

  3. Whisk eggs and season with pepper.

  4. Melt 1/2 tablespoon of butter in a nonstick pan over medium low until melted and bubbling. Add half the eggs and cook, stirring a little, until most of the liquid sets, about 2 minutes.

  5. Place two pieces of Jack cheese side by side on one half of the cooking eggs. Then place half the tuna on top of the cheese. Using a spatula, flip the plain half of your omelette over half with the cheese and tuna.

  6. Reduce heat to low and cover for 45-60 seconds to melt the cheese. Turn off heat and slide your omelette onto a plate, garnished with avocado and sliced tomato.

  7. Clean pan and repeat the same steps for the second omelette.
