Almond Cherry Parfait

 

Parfaits are an elegant dessert that require very little effort - save even more time by using canned pie filling in place of the cooked cherries.

Ingredients

Store-bought cream puffs (2 large or 4 mini)

1 teaspoon almond extract

1/4 cup + 2 tablespoons sliced almonds

1 cup fresh pitted cherries

1 1/2 tablespoons water

1/2 teaspoon lemon juice

2 tablespoons granulated sugar

1 teaspoon cornstarch

Whipped cream

Instructions

  1. Gently combine the cream puffs, almond extract and 1/4 cup of almonds; set aside.

  2. In a small pot over medium heat, combine cherries, water, lemon juice, sugar, and cornstarch. Once it starts to boil, reduce heat to low and cook for 10 minutes, stirring frequently. Cool for 30 minutes.

  3. In a clear parfait dessert cup or short glass, place 2 tablespoons of the creamy almond mixture on the bottom, followed by 2-3 tablespoons of the cherry mixture. Repeat with a second layer of creamy almond mixture and cherries and top with a dollop of whipped cream. Garnish with a tablespoon of sliced almonds. Repeat the process to assemble the second parfait.
