Tabbouleh

 

A fresh, bright, and healthy salad or side that's satisfying enough to devour as a meal.

Ingredients

1/2 cup fine bulgur

3/4 cup boiling water

3 tablespoons lemon juice

1/3 cup extra virgin olive oil

2 teaspoons salt

1/2 cup minced scallions

1/4 cup chopped mint

1/2 cup finely chopped parsley

1/2 cucumber, finely diced

1 cup cherry tomatoes, seeds removed and thinly sliced

1/2 teaspoon black pepper

Instructions

  1. Place the bulgur in a large bowl and pour in the boiling water. Let the bulgur sit, uncovered, for 1 hour.

  2. Combine lemon juice, olive oil, and salt and add to bulgur. Add remaining ingredients and toss well to combine.
