Michelin Mac & Cheese

 

Inspired by Chef Guy Savoy's Macaroni Au Gratin.

Ingredients

7 ounces penne rigate

1 1/2 ounces mild white cheddar cheese, shredded

1 1/2 ounces Gruyère, shredded

1/4 cup heavy cream

1/4 teaspoon salt

Fresh thyme leaves, for garnish

Instructions

  1. Parboil the pasta for 3 minutes in boiling salted water.

  2. Drain the pasta and immediately transfer it to a bowl filled with ice water. After 1-2 minutes, drain the pasta; set aside.

  3. In a bowl, combine 1 ounce of the cheddar, 1 ounce of Gruyère, cream, and salt. Add pasta and mix well to coat the pasta. Cover the bowl with plastic wrap or transfer mixture to an air-tight container and refrigerate for 12 hours. Gently stir the mixture every 2-3 hours.

  4. Spread out the pasta in a single layer in a small casserole dish, sprinkle the top with the remaining cheeses and broil on low for 6-7 minutes, until the cheese is light brown and bubbling.

Easy, delicious, and oh-so-satisying! Heavy on the egg, it's the perfect recipe to use up that last bit of rice from last night's takeout.

  1. Combine shrimp, harissa, ginger and garlic.
  2. In a large skillet, heat oil over high for 30-45 seconds and add shrimp in an even layer. Allow the shrimp to cook, undisturbed, for 1 minute.
  3. Reduce heat to medium, add beaten eggs and stir for 15-30 seconds until the eggs begin to set. Continue cooking for another minute until the eggs are cooked, but still soft.
  4. Add soy sauce and rice and stir frequently until the rice is warmed through, about 1 more minute.
  5. To serve, garnish with scallions.
