Michelin Mac & Cheese
Inspired by Chef Guy Savoy's Macaroni Au Gratin.
Ingredients
7 ounces penne rigate
1 1/2 ounces mild white cheddar cheese, shredded
1 1/2 ounces Gruyère, shredded
1/4 cup heavy cream
1/4 teaspoon salt
Fresh thyme leaves, for garnish
Instructions
Parboil the pasta for 3 minutes in boiling salted water.
Drain the pasta and immediately transfer it to a bowl filled with ice water. After 1-2 minutes, drain the pasta; set aside.
In a bowl, combine 1 ounce of the cheddar, 1 ounce of Gruyère, cream, and salt. Add pasta and mix well to coat the pasta. Cover the bowl with plastic wrap or transfer mixture to an air-tight container and refrigerate for 12 hours. Gently stir the mixture every 2-3 hours.
Spread out the pasta in a single layer in a small casserole dish, sprinkle the top with the remaining cheeses and broil on low for 6-7 minutes, until the cheese is light brown and bubbling.

Spicy Shrimp Fried Rice

- Combine shrimp, harissa, ginger and garlic.
- In a large skillet, heat oil over high for 30-45 seconds and add shrimp in an even layer. Allow the shrimp to cook, undisturbed, for 1 minute.
- Reduce heat to medium, add beaten eggs and stir for 15-30 seconds until the eggs begin to set. Continue cooking for another minute until the eggs are cooked, but still soft.
- Add soy sauce and rice and stir frequently until the rice is warmed through, about 1 more minute.
- To serve, garnish with scallions.
