Spicy Shrimp Fried Rice
Easy, delicious, and oh-so-satisying! Heavy on the egg, it's the perfect recipe to use up that last bit of rice from last night's takeout.
Ingredients
7 ounces raw shrimp, cut into 1-inch pieces
2 tablespoons harissa
1 teaspoon minced ginger
1 teaspoon minced garlic
1 tablespoon vegetable oil
4 eggs, beaten
1 tablespoon low sodium soy sauce
2 cups cooked rice
Sliced scallions, for garnish
Instructions
Combine shrimp, harissa, ginger and garlic.
In a large skillet, heat oil over high for 30-45 seconds and add shrimp in an even layer. Allow the shrimp to cook, undisturbed, for 1 minute.
Reduce heat to medium, add beaten eggs and stir for 15-30 seconds until the eggs begin to set. Continue cooking for another minute until the eggs are cooked, but still soft.
Add soy sauce and rice and stir frequently until the rice is warmed through, about 1 more minute.
To serve, garnish with scallions.
