Clams Casino Crostino
One crostino... Two crostini... You won't eat just one. But I like my recipes to rhyme. ;-)
Ingredients
4 ounces unsalted butter (1 stick)
10 slices thinly sliced bacon, diced
1 cup diced mini sweet peppers
1/2 cup diced onion
1/2 cup grated Parmesan
2 tablespoons chopped Italian parsley
1 tablespoon dried oregano
1/4 teaspoon black pepper
1/4 cup breadcrumbs
1 6.5 ounce cap chopped clams
1 baguette, cut into 24 1/4-inch slices
1/4 cup extra-virgin olive oil
1/2 teaspoon salt
1 lemon, cut into wedges
Instructions
Preheat oven to 400F.
Melt butter in a pan over medium low heat; add bacon. Sauté bacon for 3-4 minutes. Add peppers and onions and reduce heat to low; cook for 15 minutes, stirring frequently.
Remove the pan from the heat and add the cheese, parsley, oregano, pepper, breadcrumbs, and clams; mix well.
Refrigerate mixture for two hours, stirring every 15 minutes.
As the mixture chills, lay the baguette slices on a baking sheet. Brush each slice with olive oil and sprinkle each with a pinch of salt. Bake until lightly golden and crispy, 7-8 minutes. Remove the crostini from the tray and set aside to cool.
Reduce oven to 375F.
Remove casino mixture from the refrigerator. Add a generous tablespoon of mixture to each crostino, mounding it firmly with your hand.
Place the crostini onto a parchment-lined baking sheet. Bake for 10 minutes, until the tops begin to brown.
Carefully remove crostini from the baking sheet and serve with lemons and parsley as a garnish.
