Chopped Italian Subs
Because somtimes it's just cuter when you chop stuff super small.
Ingredients
1 tablespoon olive oil
1 teaspoon Distilled Pomodoro (or substitute Italian seasoning)
1 tablespoon red wine vinegar
1 tablespoon pepperoncini brine
3 ounces finely diced salami
4 ounces finely diced mortadella
2 ounces finely diced provolone
2 ounces finely diced smoked mozzarella
1 cup of finely chopped iceberg lettuce
1/4 cup diced red onion
2 tablespoons sliced pepperoncini peppers
1/2 cup diced cherry tomatoes
1/4 cup mayo
1 teaspoon black pepper
2 French Rolls
Instructions
Combine olive oil, Pomodoro, vinegar, and pepperoncini brine; set aside.
In a large bowl, combine salami, mortadella, provolone, mozzarella, lettuce, onion, pepperoncini and tomatoes. Add the dressing, mayonnaise, and pepper to the bowl and toss well to combine.
Slice rolls in half, lengthwise. Hollow out the roll, if desired, to make more room for the filling. Fill each roll with a generous amount of filling. Serve remaining filling as a salad on the side.
