Confetti Salad

 

Eating the rainbow just got a lot more fun with this colorful, nutritious salad.

Ingredients

2 tablespoons sour cream

2 tablespoons mayonnaise

1 teaspoon dried parsley

1 teaspoon fresh lemon juice

1 teaspoon half and half

1/8 teaspoon salt

1/4 teaspoon black pepper

1 ounce blue cheese, crumbled

1/2 cup, each, of chopped red, orange, yellow, green, indigo and violet vegetables or fruit

Instructions

  1. To make the blue cheese dressing, combine sour cream, mayonnaise, parsley, lemon juice, half and half, salt and pepper. Add blue cheese and mix well.

  2. Add two tablespoons of the blue cheese dressing to a large bowl. Add all of the vegetables and fruit.

  3. Using two large spoons, gently toss the salad for 1-2 minutes to ensure dressing is evenly distributed.

  4. Divide salad into two portions and serve.
