Fish and Rice Bake
British Fish Pie with an American twist!
Ingredients
10 ounces cooked rice
2 tablespoons butter, melted
1/4 cup heavy cream
1 teaspoon seafood seasoning
8 ounces cod, diced
1 cup heavy cream
1 cup frozen peas, thawed
1 bay leaf
1/2 teaspoon thyme
1 teaspoon salt
1 tablespoon dried parsley
A pinch of ground nutmeg
Instructions
Combine rice, butter, cream, and seafood seasoning, and set aside.
Preheat oven to 400F. Coat a loaf dish with cooking spray.
In a small, add cod, cream, peas, bay leaf, thyme, salt, parsley, and nutmeg and simmer on medium low for 10 minutes. Remove the bay leaf, taste, and adjust seasoning as needed.
Pour the fish mixture into the loaf dish. Top with rice mixture and bake for 25 minutes.
