Ham And Lima Bean Soup
If you like split pea soup, Ham & Lima Bean Soup will be your new favorite!
Ingredients
6 ounces dried large lima beans
3 tablespoons butter
1 large onion, sliced
1 fresh bay leaf
2 teaspoons salt
1 teaspoon white pepper
4 cups low-sodium chicken stock
6 ounces ham steak, cubed
Instructions
Soak lima beans in filtered water for 12-24 hours. Drain beans and remove their skin.
Melt butter in a pot over medium low and add onions. Add bay leaf and 1 teaspoon salt and sauté onions for 5 minutes.
Add lima beans and chicken stock and reduce heat to medium low. Add white pepper and remaining teaspoon of salt and simmer for 2 hours. Remove bay leaf.
Sear ham in a pan over high heat for 2-3 minutes. Add ham to soup and adjust seasoning, as needed. Garnish with shredded white cheddar.
