Roasted Parmesan Radishes
Coated in ghee, roasted, and finished with Parmesan - who needs potatoes?!
Ingredients
1 bunch radishes, quartered
2 tablespoons ghee, melted
1/2 teaspoon salt
1 teaspoon fresh thyme leaves
2 tablespoons grated Parmesan
Instructions
Preheat oven to 400F.
Coat radishes in melted ghee. Season with salt and thyme.
Place radishes on parchment lined baking sheet and bake for 30 minutes.
Remove sheet pan from oven, sprinkle radishes with Parmesan, and place sheet pan back in the oven for 3-5 minutes until melted and golden.
