Turnip Taco Tots
Turnips are the new cauliflower!
Ingredients
8 ounces turnips, roasted
4 ounces parsnips, roasted
1 large egg, beaten
2 cups shredded white cheddar
2/3 cup pork rind crumbs
1 tablespoon + 1 teaspoon taco seasoning
1/2 cup mayonnaise
1 teaspoon fresh lime juice
Instructions
Preheat oven to 400F. Line a baking sheet with parchment paper.
Combine turnips, parsnips, egg, cheddar, pork rind crumbs and 1 tablespoon of taco seasoning and mix until combined.
Roll about 1 tablespoon of mixture into a tater-tot shape with your hands and place on baking sheet. Repeat to form remaining tots. Bake for 30 minutes, until tots are golden. Sprinkle them with a little salt, if desired.
Combine remaining taco seasoning, mayonnaise, and lime juice and serve.
