Sausage and Pepper Bites
One of the world's greatest flavor combos make the perfect, bite-sized app!
Ingredients
5 links of Italian sausage
1 onion, peeled and quartered
1 package of mini sweet peppers
1 tablespoon of olive oil
1 teaspoon salt
1 teaspoon pepper
Instructions
Preheat oven to 400F. Cut Italian sausage links into 1-inch pieces and place them on a parchment lined baking sheet.
Place onions and peppers on a separate parchment lined baking sheet, coat with olive oil, season with salt and pepper, and roast with sausage for 25-30 minutes.
Blot any accumulated grease from sausage.
Quarter the mini peppers. Separate the layers of onion.
Place a piece of sausage, a slice of onion, and a slice of pepper on a toothpick. Repeat with remaining pieces of sausage. Set them on a bed of arugula and garnish with shaved cheese and extra peppers and onions.
