Spaghetti Western Caviar
Cowboy caviar with an Italian flair!
Ingredients
2 cups cooked black rice (or substitute frozen brown and wild rice)
1 can cannellini beans, drained and rinsed
1 cup cherry tomatoes, halved
2 tablespoons pimento
1 6 1/2 ounce jar marinated artichoke hearts, drained and chopped
2 tablespoons champagne vinegar
2 tablespoons extra-virgin olive oil
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/2 teaspoon honey
1 teaspoon Dijon mustard
1/2 teaspoon ground black pepper
2 tablespoons celery leaves
2 tablespoons shredded Parmesan
Instructions
In a large bowl, stir together the black rice, cannellini beans, tomatoes, pimento, and artichoke hearts.
In a small bowl, whisk together the the vinegar, olive oil, Italian seasoning, salt, honey, Dijon, and pepper. Pour the dressing over the bean mixture. Fold in the celery leaves and Parmesan.
Refrigerate for 1 hour to allow the flavors to marry.
