Mina’s Lemon Cake
Delightfully light and moist, Mina's Lemon Cake is the ideal treat when there are more than two at the table!
Ingredients
1 box yellow cake mix
1 package lemon Jell-o
4 eggs, beaten
3/4 cup vegetable oil
3/4 cup water
1/2 cup powdered sugar
1/2 cup lemon juice
Instructions
Preheat oven to 325F. Combine cake mix, lemon Jell-o, eggs, oil, and water and beat together until well mixed.
Pour into greased 9x13 pan and bake for 35-40 minutes.
Remove cake from the oven and poke all over with a fork. Combine powdered sugar and lemon juice and drizzle over the cake while warm.
