Mini Mac Tots
Not a DINK recipe for two - but it could be. Because they are THAT good. And they aren't as messy as a full-size burger. Win-Win!
Ingredients
48 frozen tater tots
1 pound ground beef
1/2 cup finely diced onion
1 teaspoon garlic salt
1/2 teaspoon pepper
2 tablespoons mayonnaise
2 tablespoons yellow mustard
2 tablespoons ketchup
2 tablespoons dill pickle relish
Nonstick cooking spray
1 cup shredded cheddar cheese
Additional ketchup and mustard, for serving
Instructions
Preheat oven to 425F. Brown ground beef in a skillet over medium high heat. Season with garlic salt and pepper.
Use a slotted spoon to transfer the beef to a paper towel-lined plate. Pour off any excees grease from the skills.
Transfer the beef back to the skillet, reduce heat to medium and add the onions. Cook until the onions are tender, about 3-4 minutes.
Remove skillet from the heat. Add mayonnaise, mustard, ketchup and pickle relish to the beef and stir to combine; set aside.
Apply a thin layer of cooking spray to the cups of a mini muffin pan. Place two tater tots in each cup and bake for 10 minutes.
Remove the muffin pan from the oven and use a pestle or a small spoon to smash the tots into a cup shape.
Fill each tater cup with the ground beef mixture and top with a healthy sprinkle of shredded cheese.
Bake for 15 minutes. Once baked, cool for 5 minutes before removing them from the pan.
Serve with a drizzle of mustard and ketchup.
