Parmesan Chicken Patties

A rich chicken patty made with Parmesan, whole cream, topped with mozzarella.

Ingredients

1 pound ground chicken breast 

1/2 teaspoon salt  

1/2 teaspoon pepper  

1/3 cup pork rind crumbs  

1/4 cup heavy cream  

1 egg  

1/2 cup + 1 tablespoon grated Parmesan 

1 teaspoon garlic paste (or minced garlic)  

1/4 cup Italian parsley, chopped 

1/2 teaspoon fennel seed   

1 cup shredded mozzarella 

2 tablespoons pesto  

Instructions

  1. Preheat oven to 500F.

  2. Place chicken in large mixing bowl. Add salt, pepper, pork rind crumbs, cream, egg, Parmesan, garlic paste, parsley, and fennel.

  3. Mix until combined and form 3 large thin patties.

  4. Place patties on a parchment lined baking sheet and roast 12-15 minutes.

  5. Top the roasted patties with mozzarella and place the patties back in oven to brown the cheese.

  6. Garnish the patties with a dollop of pesto and the remaining Parmesan.
