Sweet and Spicy Wings
We gave sticky wings a reboot using agave, cumin, and pickled jalapeños. Yum!!
Ingredients
1 pound chicken wings
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/2 cup agave syrup
1 teaspoon barbecue sauce
1/2 teaspoon ground cumin
1 teaspoon cayenne pepper
1/4 cup pickled jalapenos, minced with brine
2 tablespoons fresh cilantro
Instructions
Preheat the oven to 400F. Place a wire rack on a baking sheet lined with aluminum foil.
Pat the wings dry and season both sides with salt and pepper. Place wings on the rack, making sure they are not touching. Bake for 25 minutes, then pull them out.
Using tongs, flip wings over and bake until completely cooked, about 20 more minutes.
Combine agave, barbecue sauce, cumin, cayenne, and jalapeños (from the jar with a little of the brine) in a small pot over low heat. Simmer for 20 minutes.
Remove wings from the oven and turn the oven to broil.
One by one, dunk wings in the sauce and place them back on the rack.
Broil wings for 2 minutes to caramelize. Plate wings and garnish with cilantro.
