Sweet Po-Tater Nachos
Lighten up your nacho game with this festive, keto-friendly spin!
Ingredients
4 ounces ground beef
1 tablespoon taco seasoning
25 frozen sweet potato tots
1/2 cup of navy beans, rinsed and drained
2 ounces American cheese
1 ounce shredded cheddar cheese
Instructions
Brown ground meat and flavor with taco seasoning, and set aside.
Bake sweet potato tots according to package directions, then place about half of the tots on a plate. Top tots with ground beef and beans.
Top with remaining tots, American, and shredded cheddar and place under broiler 1-2 minutes to melt.
Garnish with a few cilantro leaves and diced red onion.
