Impossible Veggie Base

When you are looking for a vegetarian dish that satisfies both vegetarian and meat eaters, look no farther than the Impossible Veggie Base!

Ingredients

1-2 tablespoons olive oil 

1 package Impossible Burger (plant-based) 

1 tablespoon garlic paste 

1 cup chopped shallots  

1/2 cup shredded carrots  

2 small zucchini 

2 tablespoons butter 

2 tablespoons flour 

1 tablespoon fresh thyme leaves 

1 cup vegetable stock 

1 cup frozen peas  

Salt and pepper  

Instructions

  1. Brown Impossible “meat” over medium heat in a nonstick pan, 4-5 minutes.

  2. Add garlic paste, olive oil, shallots, carrots, and zucchini and cook 6-8 minutes, until zucchini is fully cooked.

  3. Add butter. Once melted, sprinkle the flour over the vegetables and stir for a minute.

  4. Add thyme, vegetable stock, and peas and increase heat to high.

  5. Allow mixture to boil for a couple minutes until a gravy develops. Season with salt and pepper.
