Turkey Mulligatawny
A comfort soup for all seasons.
Ingredients
1/3 cup onion, chopped
1 large celery stalk, chopped
1/2 cup shredded carrots
4 tablespoons butter
1 tablespoon all-purpose flour
1 teaspoon curry powder
3 cups chicken broth
1 small apple, cored and chopped
1/2 cup cooked white rice
2 cups diced turkey
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried thyme
1/2 cup heavy cream
Instructions
Sauté onion, celery, and carrot in 2 tablespoons of butter over medium heat for about 5 minutes.
Add flour and curry, and cook 2 more minutes.
Add chicken broth, mix well, and bring to a boil. Simmer for 20 minutes.
Add apple, rice, turkey, salt, pepper, and thyme. Simmer 10-15 minutes and cool.
Purée in a blender and add back to the pot. Add heavy cream and re-season as needed. Garnish with golden raisins, shredded carrot, and parsley.
