Maggie's BCT Pasta Salad
When your cousin asks you for a light but flavorful salad recipe, there’s only one way to go - Maggie's BCT Pasta Salad!
Ingredients
1/2 box (8 ounces) mini farfalle pasta (any small pasta will do)
1/4 cup lemon juice
2 tablespoons mayonnaise
1 teaspoon salt
1/2 teaspoon pepper
6 slices of cooked bacon, chopped
20 grape tomatoes, halved (or 1 large, ripe tomato, diced)
3 tablespoons capers
1 scallion, sliced
Instructions
Boil pasta for 7-8 minutes in salted water and drain.
Combine lemon juice, mayonnaise, salt and pepper and add to cooked pasta while it's still warm.
Mix well to distribute the dressing and add bacon, tomatoes and 2 tablespoons of capers.
Toss to combine and garnish with remaining 1 tablespoon of capers and scallions.
