Chicken Ranch Quesadillas

 

All the crispy, less of the fatty - alllll of the flavor!

Ingredients

8 street taco flour tortillas

Nonstick cooking spray

2 tablespoons grated jalapeno

1 tablespoon whipped cream cheese

1 cup shredded chicken

3 tablespoons minced bacon

1/3 cup shredded Colby jack cheese

1/4 teaspoon pepper

1/4 teaspoon paprika

1/2 teaspoon garlic salt

1 teaspoon Ranch seasoning

Instructions

  1. Preheat oven to 425F. Lay the tortillas on a parchment lined baking sheet. Spray both sides with a light layer of nonstick cooking spray; set aside.

  2. In a medium bowl, combine jalapeno, cream cheese, chicken, bacon, shredded cheese, pepper, paprika, garlic salt and Ranch seasoning.

  3. Place 1/4 of the chicken mixture on top of one tortilla, and top with another tortilla. Repeat to assemble 3 more chicken quesadillas.

  4. Bake for 10 minutesm until the top tortillas are golden. Flip the quesadillas over and bake another 3-5 minutes until both sides are crispy.
