Whipped Feta Dip with Roasted Balsamic Strawberries

 

Not your funky feta, baby - this is luscious, creamy and PERFECT for summer!

Ingredients

8 ounces feta, crumbled

1/2 cup + 2 tablespoons extra virgin olive oil

1/4 cup whipped cream cheese

1/4 cup water

3 tablespoons honey

1/2 teaspoon black pepper

2 cups halved strawberries

1 tablespoon balsamic vinegar

Fresh basil, for garnish

Instructions

  1. Preheat oven to 400F. In a medium bowl, combine the balsamic vinegar with 2 tablespoons olive oil and 1 tablespoon honey. Toss the strawberries in the balsamic mixture and transfer to a parchment-lined baking sheet. Roast strawberries for 15 minutes; set aside to cool.

  2. Add feta, 1/2 cup olive oil, cream cheese and water to a food processor and pulse to combine. Add 2 tablespoons honey and pepper and run food processor until the dip is smooth and creamy.

  3. To serve, transfer the dip to a shallow bowl and garnish with a sprinkle of pepper and fresh basil. Top with fresh strawberries and serve with crostini.
