Lazy Latke Bowls

 

Remember when your Mom used to lovingly fry every latke for you? Reward her this Mother's Day with this nostalgic (and easy) comfort dish! Payback is yummy.

Ingredients

14 cup vegetable oil

16 ounces frozen hash browns

1/2 teaspoon salt

4 ounces smoked salmon

1/4 cup Mexican crema

2 tablespoons capers, drained and rinsed

1 teaspoon fresh dill, finely chopped

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. When hot, add frozen hash browns in an even layer. [Careful! Any extra moisture or ice crystals on the hash browns will cause the oil to spatter. Remove from heat, as needed, to safely spread the hash browns in an even layer.]

  2. Cook hash browns, undisturbed, until golden on the bottom, about 8-10 minutes. Flip and brown the other side, about 8 more minutes.

  3. Season hashbrowns with salt.

  4. To serve, divide hash browns in half and transfer each half to a separate bowl. Too each bowl, add half of the salmon and drizzle 2 tablespoons of crema. Sprinkle each bowl with a tablespoon of capers and 1/2 teaspoon of dill.
