Cranberry Apple Walnut Slaw

 

Bright, light and delicious! Choose your own adventure and substitute different nuts and dried fruit in this simple, stunning slaw.

Ingredients

1/4 cup mayonnaise

1/2 cup low fat Greek yogurt

3 tablespoons agave syrup

1 tablespoon lemon juice

3/4 teaspoon dried, ground ginger

1/4 teaspoon black pepper

14 ounces coleslaw mix

1 large apple, diced

1/2 cup dried cranberries

1/2 cup chopped walnuts

2 tablespoons finely sliced green onions

Instructions

  1. Whisk mayonnaise, yogurt, agave syrup, lemon juice, ground ginger and pepper until combined; set aside.

  2. In a large bowl, combine remaining ingredients. Add dressing and toss until combined.
