Trash Caesar
My homage to the infamous Garbage Caesar salad at Piero's in Las Vegas.
Ingredients
2 hearts of palm spears, sliced
2 romaine hearts
1 medium avocado, diced
1/2 cup diced heirloom tomato
1 cup croutons
1 cup bay shrimp
1 cup grated Parmesan + more for garnish
1/2 teaspoon garlic paste
1 tablespoon lemon juice
1 teaspoon anchovy paste
1/2 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
2 tablespoons olive oil
1 tablespoon sour cream
1/2 teaspoon black pepper
Instructions
In a large bowl, add romaine, hearts of palm, avocado, tomato, croutons, shrimp and 1/2 cup of the grated Parmesan. Toss to combine.
In a small bowl, combine remaining ingredients to make the dressing.
Add the dressing to the salad and toss well. Serve with more grated Parmesan and pepper.
