Cucumber & Broccoli Salad

 

Riced broccoli, cucumber, red onion and red cabbage - visually stunning and PERFECT with creamy Asian dressing!

Ingredients

2 cups riced, raw broccoli

1 English cucumber, finely chopped

1 cup finely minced red cabbage

1/2 cup finely minced red onion

2 tablespoons mayonnaise

2 1/2 tablespoons rice vinegar

2 teaspoons toasted sesame oil

2 tablespoons soy sauce

1/2 teaspoon onion powder

1 tablespoon sesame seeds

Instructions

  1. In a large bowl, combine the broccoli, cucumber, cabbage and onion.

  2. In a small bowl, combine mayonnaise, vinegar, oil, soy sauce and onion powder and whisk until smooth. Add to the large bowl and toss well to combine.

  3. To serve, sprinkle with sesame seeds.
