Harissa Cheddar Bites
The perfect snack to enjoy with your vino!
Ingredients
8 ounces grated cheddar cheese
1 cup all-purpose flour
4 tablespoons butter, cut into 1/2 inch cubes
1/2 teaspoon salt
1/2 teaspoon harissa or chipotle powder
3 tablespoons ice water
Instructions
Place cheese, flour, butter, salt, and harissa/chipotle powder in a food processor. Pulse until the mixture resembles sand.
Add the ice water. Pulse until the mixture forms into a loose ball of dough.
Remove the dough from the food processor and press it into a ball. Wrap the dough in plastic and refrigerate for a minimum of 1 hour.
Preheat the oven to 350F. Remove the dough from the refrigerator and roll out the dough to about a quarter inch in thickness.
Cut flattened dough into squares and place them on a parchment-lined baking sheet.
Bake for 15 to 20 minutes, until light golden brown. Cool on a wire rack to crisp.
