Salmon Pinwheels

 

Hosting brunch? This keto-friendly appetizer is the perfect way to welcome your guests. Everything you love about bagels, without the heavy carbs.

Ingredients

1 cucumber

8 ounces smoked salmon

1/2 cup cream cheese

1/4 teaspoon black pepper

1 tablespoon chopped dill

1 tablespoon vodka

1 tablespoon capers, rinsed and patted dry

2 tablespoons shaved red onion

2 tablespoons everything bagel seasoning

Instructions

  1. Using a vegetable peeler, peel thin strips of cucumber lengthwise, making sure to stop just as the cucumber seeds become visible.

  2. On a clean, flat surface, shingle the strips of cucumber lengthwise, overlapping the edge slightly. Top the cucumber with a layer of salmon.

  3. Combine cream cheese, pepper, dill, and vodka.

  4. Spread the cream cheese mixture over the salmon and sprinkle with capers and red onion.

  5. Carefully lift the bottom of the cucumber slices and roll to the top, creating a long cylinder.

  6. Wrap the cylinder in plastic wrap and freeze for 2-3 hours until firm.

  7. Using a serrated knife, slice pinwheels about an inch wide.

  8. Sprinkle the pinwheels with everything bagel seasoning and serve.
