Shirataki Florentine
Shirataki pasta are delicate, plant-based, super noodles that literally net out to zero carbs – the perfect keto vehicle for a luscious cream sauce loaded with spinach!
Ingredients
2 tablespoons unsalted butter
1 shallot, minced
2 teaspoons garlic, minced
1/3 cup vegetable broth
4 cups fresh spinach
1/2 cup heavy cream
2 tablespoons grated Parmesan
1/2 teaspoon salt
1/2 teaspoon pepper
1 package of shirataki noodles (7 ounces)
Instructions
Heat a large skillet over medium heat and melt the butter.
Add garlic and shallot to the pan. Sauté for 2 minutes, stirring frequently.
Add vegetable broth to the pan and simmer for 3 minutes.
Add spinach to the pan and wilt, about 1 minute.
Reduce heat to medium low and add cream and Parmesan.
Simmer for 3-5 minutes and salt and pepper. Set aside.
Prepare shirataki noodles according to package instructions.
Combine sauce and noodles, simmer on low for 5 minutes, and serve.
