Buon Gusto Salad

This keto salad combines all of your antipasto favorites into one!

Ingredients

1 bag of pre-washed lettuce Italian lettuce blend (10 ounces)

1 cup sliced grape tomatoes

4 ounces salami, diced

1/2 cup artichoke hearts, diced

1/2 cup Italian green olives, sliced

4 pepperoncini peppers, sliced

1/4 cup shredded Parmesan

1 teaspoon anchovy paste

2-3 tablespoons mayonnaise

2 tablespoons balsamic vinegar

Cracked black pepper

Instructions

  1. Place lettuce, tomatoes, salami, artichoke hearts, olives, peppers, and Parmesan in a bowl and toss well.

  2. Combine anchovy paste, mayonnaise and balsamic vinegar, pour dressing over the salad and toss again. Season with cracked black pepper. This salad is deceptively satisfying; however, if you’re not sure it’ll be enough for two, add some diced chicken - or more salami!!
