Caulifiori Tots
Cheesy Italian tots made with cauliflower, mozzarella, and Parmesan are a tasty keto appetizer.
Ingredients
12 ounces riced cauliflower, steamed
1 large egg, beaten
1 cup shredded mozzarella
1 cup freshly grated Parmesan
2/3 cup pork rind crumbs
2 tablespoons Italian parsley, chopped
1/4 teaspoon salt
1 teaspoon Italian seasoning
1/2 teaspoon black pepper
1/2 cup marinara sauce
Instructions
Preheat oven to 400F. Line a baking sheet with parchment paper.
Place riced cauliflower on a clean kitchen towel and squeeze to release as much water as possible. Transfer cauliflower to a large bowl and add remaining ingredients. Mix well.
Roll about 1 tablespoon of mixture into a tater-tot shape with your hands and place on baking sheet. Repeat to form remaining tots. Bake for 30 minutes, until tots are golden. Sprinkle with a little more salt and serve warm with marinara sauce.
