Crab-Stuffed Tomatoes
My mother's recipe, which I have never been able to reproduce despite hours of her patient coaching. But it's close - and it's GREAT.
Ingredients
10 cherry tomatoes
3 ounces cream cheese, softened
1/4 teaspoon onion powder
2 tablespoons of finely diced chives
1 teaspoon of mayonnaise
1 teaspoon heavy cream
1/4 teaspoon hot sauce
3 ounces Dungeness crab
1/2 teaspoon paprika
Instructions
Remove stems from cherry tomatoes, slice off the bottoms, and invert (stem side becomes the bottom so they don’t roll). Scoop out all the seeds leaving cleanly hulled mini tomato bowls. Dry them out completely inside.
Combine room temp cream cheese, onion powder, 1 tablespoon of chives, mayonnaise, heavy cream, and hot sauce. Gently fold in Dungeness crab (or the best crab in your area).
Stuff about a teaspoon of crab filling in each tomato. Top with remaining chives and a pinch of paprika.
