Creamy Spinach & Artichoke Cauliflower
The iconic Spinach & Artichoke dip transforms into a deliciously creamy, low-carb side.
Ingredients
Nonstick cooking spray
2 ounces cream cheese
1 tablespoon sour cream
1 tablespoon mayonnaise
1/4 cup grated Parmesan
2 ounces Boursin or herbed goat cheese
1/2 teaspoon pepper
1/4 salt
6 ounces frozen riced cauliflower, thawed and squeezed to remove excess liquid
2 ounces marinated artichoke hearts, drained and chopped
6 ounces frozen spinach, thawed and squeezed to remove excess liquid
Instructions
Preheat oven to 350F.
Apply a thin layer of nonstick cooking spray to a loaf pan.
In a large mixing bowl, combine remaining ingredients.
Transfer mixture to prepared loaf pan and bake for 20 minutes.
