Mortadella Stuffed Mushrooms
Stuffed mushrooms with a lot of porkitude!
Ingredients
5 ounces mortadella
2 tablespoons cream cheese
15 baby Bella mushrooms, wiped clean with a damp paper towel
1 tablespoon pork rind crumbs
1/4 teaspoon dried thyme
2 tablespoons chives, chopped
Instructions
Preheat oven to 400F. Remove stems from all mushrooms and set stems aside. Spray mushrooms with cooking spray and place in an 8x8 baking dish.
Add mushroom stems, mortadella, and cream cheese to a food processor and pulse until well combined.
Fill each mushroom with about a tablespoon of filling. Combine pork rind crumbs and thyme and sprinkle over mushrooms.
Bake for 20 minutes. Garnish with chives.
